Smokin’ Fire Rack of Ribs

As the weather is heating up, let’s heat up the BBQ too.

Ingredients:

1 rack of baby back ribs

1 tbs cumin

1 tbs chilli powder

1 tbs smoked paprika

Pinch salt & Pepper

Juice of 1 lime

1 jar of Smokin’ Fire

Preparation:

Cover ribs with lime juice, wrap in cling film and put in the fridge for 2hrs. (This prepares the meat’s surface to receive the spices).

Place cumin, chilli, salt, pepper and paprika in a small jar. Put lid on and shake well to mix thoroughly.

Coat ribs with spice mix and massage in.

Cover in foil and marinate in fridge for 4-8hrs. Remove 1 hour before cooking to bring meat back to room temp.

Heat oven to 180C

Place a wire rack inside a large ovenproof dish. Add warm water below rack (approx 5mm deep).

Unwrap ribs and place on wire rack. Cover the dish tightly with a lid or foil, and cook for 3hrs.

Remove dish and leave to rest for 20 mins.

Heat grill or bbq to high heat.

Baste ribs with Smokin’ Fire and grill for 5 mins.

Transfer to a serving plate and baste once more.
