Smokin’ BBQ picks up Great Taste Award

I’m hugely proud to announce that my Smokin BBQ Sauce has collected a major honour awarded by the Guild Of Fine Food. This latest recognition is added to the merits it achieved from the Cheese And Chilli Festivals in 2019.
I only entered this one product into the Great Taste Awards following such good feedback from foodies and reviewers throughout this year. There were over 12,000 entrants and the judging process is notoriously meticulous, so it is with immense pride that I received the notification this week that my sauce was a winner.

Its uses are a limited as your imagination – I dip chips and raw veg into it, smother it on burgers, coat it over cooked ribs, and recently made an awesome chilli-dog in puff pastry with a Smokin BBQ coating.

Big congrats to all the other Great Taste Winners, I’m delighted to be part of that club.

Cheese & Jalapeno Quick Bread

This super-easy, no-yeast bread is delicious. Serve with a thick chunk of your favourite cheese and good dollop of my Scorched Onion Sauce. A great addition to your ploughman’s lunch, soups or just tear it apart and share for snacking.

Prep time: 10 mins
Cook time: 45 mins


NOTE: the chillies are optional – you can even include bacon bits or chopped fried shallots too!

375g plain flour
1 tsp salt
1 TBS baking powder
2 TBS sugar
115g cream cheese, room temp.
250g grated mature cheddar
2 jalapenos, chopped
1 egg
350ml whole milk
1 TBS melted butter


  1. pre-heat oven (180C) and grease a loaf pan
  2. mix flour, salt, baking powder and sugar. set aside.
  3. In a large bowl, mix cream cheese, grated cheddar and jalapenos until combined. (add bacon etc if using)
  4. add flour mixture to cheese mixture, add the egg, milk & melted butter. Mix until just combined.
  5. transfer to loaf/baking tin and bake for circa 45-50 mins.
  6. slide a knife around the sides and set on wire rack for 10 mins before serving.
  7. enjoy with friends and don’t forget the Scorched Onion sauce!

Spicy Fried Chicken with quick Garlic Mayo

I’m a big fan of fried chicken, and this recipe is one of my favourites. The garlic mayo works nicely to cool down the spicy chicken.


for the chicken prep:
3 large Chicken Breasts – I cut mine into strips but if you’re cooking whole breast then cover with clingfilm and flatten to about 8mm thick.
280ml buttermilk
1 tsp of garlic salt
1 tsp cayenne chilli powder
1 tsp salt & pepper

for the coating:
200g plain flour
pinch salt and pepper
1 tsp garlic salt
1 tsp dried thyme
1 tsp dried oregano
1 tsp baking powder
1 tsp mustard powder
2 tsp smoked paprika
3 tsp Cayenne or hot chilli powder

for the garlic mayo:
4 heaped tbs of light mayonnaise
1 tsp of Pepper Jar’s Garlic Sauce


Mix the buttermilk, 1 tsp garlic salt, salt/pepper & 1 tsp cayenne in a large bowl. Submerge the chicken, cover and chill in the fridge for 2 – 4 hrs.

In another large bowl or large tray, thoroughly combine all dry ingredients for the coating.
Remove chicken from buttermilk and let excess drip off. Cover both sides of chicken in flour mixture, and set aside.

Heat a pan of vegetable oil, or deep fat fryer to 175 degrees. Carefully place chicken in the oil, trying not to overcrowd – cook in batches if necessary. Fry for 5 – 6 mins until coating is golden and chicken is cooked through.

For the garlic mayonnaise: Combine the mayonnaise and Pepper Jar Garlic Sauce in a small bowl.

To Serve:

Serve the fried chicken either naked with a salad and garlic mayo on the side, or assemble into a bun of your choice with fresh salad, skinny fries….and remember to smother with the garlic mayo.

Cheese and Chilli Fest – Guildford

Reflecting on the Guildford Cheese and Chilli Festival today with mixed feelings. 

Sales were down, though the crowds were up.

Saturday was the killer. The Pepper Jar pitch wasn’t well situated at all. We were on the outer perimeter of a bend which naturally took visitors away from our stall. This was made worse because punters also had the chance to take a short cut to the entertainment area before they even reached us, which meant they had no reason to walk anywhere near our stall.

So saturday was a hard sell, I felt a bit like one of those reps in Benidorm trying to coax punters into their bar from the streets with the promise of 4 free shots!!

However… credit to the organisers who listened to our concerns and addressed them effectively for Sunday.

Thanks to a makeshift fence and a strategically placed giant inflatable Cheese and we were driving the crowds nearer to our stall once more.

Other positives included watching the UK Chilli Queen extend her unbeaten run to 63 not out, against USA’s finest, Johnny Scoville.

And I was delighted to have my wife with me all weekend too, for company and some pretty neat sales and marketing ideas.

No medals this time, but there were way more top quality rivals and I’m just thankful to have been stood amongst them.

The small matter of The Game Fair comes next, then on to Cheltenham….

Cheese and Chilli Fest – Swindon 2019

Monday mornings following a festival are typically a struggle. De-camping the weekends’ car-load of boxes, gazebos, signage and stock is a laborious necessity. Except for today. For today, I still have a massive spring in my step following the Swindon Cheese and Chilli Festival

The Garlic Fire Sauce was VERY popular at the weekend.

The weather was perfect, the crowds turned out in their thousands – and they were a real decent bunch – interested in the products, knowledgable, engaging and there for a good time! 

If that wasn’t enough reason for my upbeat Monday morning, sales were up too. 👍🏻

Furthermore, my fellow traders were all on good form too, we had lots of laughs and superb comradery which gets stronger each event. Name dropping Chilli Olly & Chilli Pepper Perrett, Sico, and the Smoking Crow Guys here.

So, all in all a glorious event. Oh wait, there was one other thing…

My first ever 1st place GOLD MEDAL 😊🥇 which was awarded to my amazing ‘Garlic Fire’ in the mild category. (I also got a 3rd place bronze medal for Smokin’ Fire in the medium section).

I’m overjoyed, beyond delighted. Not least of all, because these are voted for by the visiting public in the tasting tent, but also because there are so many awesome products in each category, created by some of the biggest names and most talented Chilli chefs in the country.

And here’s me, little Pepper Jar Creations, setting the festivals on Fire.

Higham Ferrers Charter Celebration Day Market

Pepper Jar had a good day’s trading at the Higham Ferrers Charter Celebration Day Market.

It was the hottest day of the year so far, but the crowds still came out to taste and buy the delicious range of Pepper Jar hot sauces.

It was good to meet the Mayor and to see the locals dressed up in medieval costume as part of the celebrations.

While the children were choosing their favourite ice creams, the grown ups were deciding which Pepper Jar Chilli Sauce was their favourite, and with the full range on offer there was something to suit all tastes.

We return to Higham next month, but until then it’s full focus on the Cheese and Chilli Festivals – starting again this weekend in Swindon.

Next Event – Charter Celebration Day 29th June

This weekend, Saturday 29th June 2019, Pepper Jar Creations will be at the Higham Ferrers Farmers Market from 9am until 5pm.

This is taken from their Facebook page: This wonderful free event for all the family. Medieval encampments, demonstrations and activities throughout Higham Ferrers.
Visit Castle Fields, Chichele College, Market Square, St Mary’s Church and The Bede House to see all there is on offer.
All day Farmers Market with delicious locally sourced street food available. A great opportunity to learn more about our local history and have fun with the family.
